In Your Words: Day 4

Had a good day eating today.  Coffee again for breakfast; left-over spaghetti with sauce, carrot and celery sticks; apple and banana for lunch.  Felt full after lunch and it carried me to a small snack of whole-wheat crackers and peanut butter before dinner.  Dinner was the red beans and rice (tasty and the rice was not gummy), with a little gumbo made from the chicken broth, okra that we are growing, tomatoes, and a little of the brown rice left-over from the extra when I cooked the pound of rice on Saturday.

All in all, not too bad.  Have decided to take some crackers and peanut butter with me to work.  Hopefully, will hold off the hunger that hits at 10:30.  Food is plentiful and I am feeling full tonight.

Again, I would not want to do this every week.  Very tough to be always thinking about how much and what to eat to make food last.  Also, with all that one sees about food – TV, billboards, yummy lunches from the cafeteria, driving by bakeries and coffee shops – it is very difficult to imagine not being able to buy what I want when I want it.  Not that I am extravagant with food; just that I do like food of all kinds.
